Spinach Mozzarella Nuggets

These spinach balls are fun for kids and adults too. They are slightly crispy and have a nice flavor. I have also made them with a mixture of kale and spinach, and they were delicious as well!

Egg, Cheese and Buckwheat Crêpes with Spinach

Need a quick healthy meal that’s fun for the family? Martha Rose Shulman from the New York Times has a delicious and healthy Buckwheat Crêpes recipe to try. Eggs, quality cheese, and fresh baby spinach rolled up in a buckwheat crêpe make for a fast, tasty supper. In France, they eat buckwheat crêpes with savory foods in a square shape and call them a galette. Don’t be intimidated to make these thin pancakes; they are very easy. The dark color of the crêpe may be unfamiliar to you, but it has a delicious, nutty taste that isn’t heavy-tasting like wheat (buckwheat is not wheat, but in fact a seed), while also very nutritious.

Quick Spinach & Tomato Pasta

Total time: Serving amount: When I have some leftover pasta, I make this quick dish for dinner, and everyone loves it. I try to keep these ingredients on hand, so I always have something good, fast and healthy to make. 1 Tsp olive oil (optional) 2 Tsp crushed garlic or 5 cloves of fresh garlic, […]

Quick Spinach Mozzarella Salad

Total time: Serving amount: When it’s time to eat dinner and I’m not on the ball, I usually make this salad (especially for my girls who like tomatoes). It began as a simple tomato and fresh mozzarella salad with balsamic dressing, red onion and fresh basil (if I had it). Over time I added more […]

Spinach Egg Muffins

These are especially kid-friendly egg muffins, given their size, but everyone enjoys them. They are tasty, easy and a great way of sneaking in some vegetables and protein. Cottage cheese provides 28 grams of protein in each cup. No worries if you don’t like cottage cheese; you’ll never even know it’s there! Feel free to replace some or all of the sharp cheddar cheese with other types of cheese like Romano cheese. Mix up the vegetables too. Chopped tomatoes are excellent in these muffins! Each muffin contains about 9 grams of protein each and they reheat well. Enjoy!

Sweet Potato Donuts

Summer at the beach means donuts! Why not eat healthier donuts that taste good but actually make you feel good after you eat them? These sweet potato donuts are made with amazing whole food ingredients like chickpeas, Greek yogurt, whole grain flour, cooked sweet potato, and pure maple syrup. Use donut pans that are inexpensive to buy or muffin tins with foil in the middle to hold open the donut holes while they cook. Have fun with the toppings and enjoy!

Roasted Broccoli

This roasted broccoli is addictive. The young adults I’ve introduced this recipe to swear by it also. Parents tell me their vegetable-hating kids are gobbling it up like french fries.

It cooks at high heat to give it crunch. It looks a little burnt, but it’s not — it’s delicious!

Pumpkin Pie Bites

These mini crustless pumpkin pies are the perfect size to enjoy at any gathering. They bring people together: they’re scrumptious for those who don’t care if they are healthy and for those who do! These pie bites are made with almond flour to be gluten-free, the processed sugar is replaced with pure maple syrup, and they can easily be made dairy-free. I’ve brought them to several parties with rave reviews. Plus, they’re easy to make.

Don’t forget to savor each mini bite!

Keto Versus Intermittent Fasting: Which is Best?

When it comes to weight-loss diets, both the keto plan and an overnight intermittent fasting plan are effective weight-loss strategies — for the short term, anyway. People swear by one or the other, but as a wellness dietitian, I want to point out a few of the hidden costs of the ketogenic diet in contrast to some of the benefits of an overnight intermittent fasting regime. Just hear me out on this one!

Best Time to Eat for Lasting Weight Loss and Better Health

Does it matter when you eat your food? A growing body of evidence suggests that an overnight fast, aligned with darkness and your body’s nighttime response, may be a critical piece of the weight loss puzzle.

Pineapple Whip with a Mango Twist

Dole Pineapple Whip sure tastes wonderfully refreshing on a hot summer day! This 4-ingredient frozen yogurt version of pineapple whip is quick to make at home and healthier. Add a fresh mango for a delicious twist or add more frozen pineapple. This recipe calls for a small container of coconut Greek yogurt but feel free to substitute a nondairy coconut yogurt to make a dairy-free dessert. This yummy recipe is supposed to be more of pineapple-mango ice cream rather than a smoothie. But if you’re in a smoothie mood, add a little fresh pineapple juice (or other fruit juice) to thin it out. Enjoy and stay cool!
