Avocado Black Bean Corn Salad
This salad is one of my most requested recipes. It's easy to make and very healthy. The sweetness of the fruit salsa offsets the tartness of freshly squeezed lime juice, without adding sugar. The avocados, directly doused with lime juice and red onions, keep their color for several hours. Fresh tomatoes are also a good addition to this salad but not necessary. The frozen roasted corn is available at Trader Joe’s, but any frozen corn will work. I use medium-hot salsa, but it seems rather mild once mixed with other ingredients, so use hot salsa and/or add some hot peppers if you want it spicier.

Ingredients
2 (15-oz) cans black beans, rinsed well and drained 1 (16-oz) bag frozen roasted corn (3 1/2 cups) 2 (12-oz) jars Spicy, Smoky, Peach Salsa (Trader Joe's) or 3 cups mango, peach or pineapple salsa 1/2 cup fresh lime juice (4 limes) 4 avocados, diced 1/4 - 1/2 cup chopped red onion, chopped fine salt to taste 1/2 cup cilantro jalapeños peppers to taste (optional)
Directions
1) Mix black beans, frozen corn, and fruit salsa together in a medium bowl. Squeeze limes and set aside. Add avocado to salad, and before mixing, immediately add lime juice, red onion and salt to salad. Gently mix all ingredients together. Feel free to give this salad a little kick with some hot pepper flakes or hot sauce. A freshly diced jalapeño pepper tastes great too. Add cilantro prior to serving.
