Berry Slaw Salad

This coleslaw recipe is unique but delicious! The raw honey and blueberries add sweetness to counter the tartness of the raspberries and vinegar. The fresh mint pairs well with the fruit and brings a refreshing taste. It's not spicy, but it does have a slight kick that gives this salad another dimension. 4 cups very thinly sliced red cabbage (8 ounces) 1 1/2 cup matchstick carrots 1/4 - 1/2 cup diced red onion 2 tbsp fresh mint, chopped 1 cup blueberries 1 cup red raspberries

Slaw Ingredients Directions

1) In a large bowl, combine the slaw ingredients, except the blueberries and raspberries.
2) Pour the dressing over the cabbage mixture and toss. Top with blueberries and raspberries and gently toss. Cover and refrigerate 2 hours.

Dressing Ingredients Ingredients

1/2 cup frozen unsweetened red raspberries 3 tbsp raw honey or pure maple syrup 2 tbsp red wine vinegar 2 tbsp olive oil 1/4 tsp black pepper 1/4 tsp salt 1/8 to 1/4 tsp cayenne or red pepper flakes

Dressing Ingredients Directions

1) Combine the dressing ingredients in a jar. Heat in microwave for 30 seconds to warm. Secure with lid and shake vigorously until well blended.
