Citrus Avocado Salad

This salad, with its luscious citrus fruits complimented by creamy avocado, is jazzed up with red onion and a kick of poblano or jalapeño pepper, and is a great dish to liven up the winter! It makes a nice side dish with fish or chicken, or it can be served as a salsa when you cut the pieces smaller.

This salad, with its luscious citrus fruits complimented by creamy avocado, is jazzed up with red onion and a kick of poblano or jalapeño pepper, and is a great dish to liven up the winter! It makes a nice side dish with fish or chicken, or it can be served as a salsa when you cut the pieces smaller.

Ingredients

  • 3 cups navel oranges, cut into 1/2 inch pieces
  • 2 cups pink grapefruit, cut into 1/2 inch pieces
  • 1/4 cup minced red onion
  • 2-3 tbsp minced poblano or jalapeño peppers
  • 2 tsp fresh lime juice
  • 1/2 tsp kosher salt
  • 2 avocados, seeded, peeled and diced
  • 2-4 tbsp chopped fresh cilantro

Instructions

  1. Cut the top and bottom off of the oranges and the grapefruit to make a stable cutting surface. Place fruit flat on cutting board, and using a sharp knife, slice down on the sides to remove the peel and white pith. Dice the whole orange, but section the grapefruit: holding the fruit in your hand, gently cut the grapefruit along the sides of the membranes to get wedges of grapefruit out without the membranes.
  2. Combine all ingredients in a bowl, except avocados and cilantro, and toss gently. Just prior to serving, cut and add the avocado and cilantro; combine well. Enjoy!
