Citrus Vinaigrette

I've been making this dressing all summer, so it's well tested. The general consensus is "can I have the recipe?" It's delicious! Very versatile, so you can use any citrus you have on hand, and typically the other ingredients are already in your pantry and fridge. I like this vinaigrette best with one tablespoon of fresh lime juice and either lemon or orange juice for the remaining tablespoon. If you use orange juice, you don't need the extra tablespoon of honey unless you like it pretty sweet. Extra virgin olive oil adds healthy monounsaturated fats to the dressing, which are great for decreasing bad cholesterol, triglycerides, blood pressure, and blood sugar. Exciting research even suggests that monounsaturated fat may help us reduce abdominal fat! Now there's a dressing you don't have to feel guilty about.

1/4 cup extra virgin olive oil 1 tbsp white balsamic vinegar 2 tbsp freshly squeezed citrus (any combination lime, lemon, or orange) 2 tsp dijon mustard 2 - 3 tbsp raw honey (or pure maple syrup) to taste 1 tsp crushed garlic salt and pepper to taste


1) Mix all the ingredients up in a jar and shake. You're welcome to put in all the ingredients together except the olive oil and mix the oil in last with an immersion blender for a nicer consistency. However, this dressing is terrific without that extra step. Just shake before using.
