Cranberry Almond Bread

This healthy cranberry bread is moist and tasty using almond butter instead of butter. High in protein and great for breakfast or a snack, this bread is a festive way to eat cranberries.

3 cups white whole wheat or sprouted whole wheat flour 1 tsp salt 3 tsp baking powder 1 1/3 cup pure maple, raw honey or sugar 2 eggs orange zest and juice of 1 orange 1/2 cup almond butter 1/2 cup plain or vanilla Greek yogurt (for a little sweeter bread) 3 tbsp oil 1 cup milk or almond milk 1 tsp almond extract 1 cup fresh cranberries, chopped


1) Preheat over to 350.  
2) In a medium bowl, add flour, salt, baking powder together. Set aside.
3) In a large mixing bowl, add syrup or honey, eggs, zest, juice, almond butter, yogurt, oil, milk, and extract. Beat well with a beater.  
4) Mix flour mixture with wet mixture until just mixed.  Gently stir in chopped cranberries mixed with 1/4 cup sugar.
5) Pour batter into bread pan and bake until just firm in the middle, about 50 minutes.
