A refreshing pie for spring and summer, this dessert is health-promoting too. Its pretty green color comes from avocado, but don’t let that scare you. The avocado adds creaminess and a nice mild flavor too.

Once frozen, it's hard to tell that this dessert has avocado in it, and admittedly, I didn't tell anyone this fact until after they had raved about it. My adult testers loved it, while the children and teenagers were leery. Children and adolescents may appreciate a sweeter lime taste using the higher range of sweeteners included in the recipe while those who appreciate a slightly tart lime taste may want less sweetener.

Adding nutrients, including protein and microbes, the base of this pie is Greek yogurt with a delicious crust that is sure to please everyone. The crust is fabulous and adds a wonderful flavor to this pie. Don’t be tempted to replace the crust!

Because yogurt is made by microbes feeding on the carbohydrate in the milk, yogurt is low in lactose and contains health-promoting bacteria that often negate the problems people sometimes experience with milk. So don't just dismiss yogurt in general or in this pie specifically just because it contains dairy.

While avocados are mostly a healthy fat source, they contribute many nutrients and improve the absorption of nutrients in other foods. Desserts tend to be high in fat and calories anyway, but at least this pie provides fat that contributes many nutrients, boosts health, and even keeps you full and satiated. Enjoy!

Ingredients

Crust Ingredients
  • 1 1/2 cups unsweetened, shredded dried coconut
  • 1 1/2 cups walnuts
  • 1/2 tsp salt
  • 1/2 cup pitted medjool dates
  • 1 tbsp lime zest (optional)
Filling Ingredients
  • 2 cups mashed avocados (3 avocados)
  • 1 large 30 oz container (3 cups) plain or vanilla Greek yogurt (if using vanilla yogurt only 1/3 cup maple syrup is needed)
  • 2/3 to 3/4 cup pure maple syrup (2/3 cup if you like it tart, 3/4 cup if you like it sweeter)
  • 1/4 cup freshly squeezed lime juice (about 2 limes)
  • Kiwi or strawberries, diced to mix in filling (optional) and sliced to serve on top just prior to serving (optional)

Instructions

Crust Directions
  1. Place coconut, nuts, salt, pitted dates and lime zest in a food processor and mix for 2-3 minutes.
  2. Press crust into a 9-inch pie or tart plate and set aside.
Filling Directions
  1. Place avocado, Greek yogurt, maple syrup (use half the amount called for if using vanilla yogurt instead of plain Greek yogurt), and lime juice all in a food processor or blender and mix until smooth. Fold in chopped kiwi or strawberries if desired.
  2. Using a spatula, fill avocado mixture into pie crust.
  3. Freeze for at least two hours.
  4. Serve frozen, but you may need to sit for about 30 minutes to allow it to soften just a bit if it's frozen-sold. Serve with fresh kiwi or strawberries as a garnish (optional).
