Greek Yogurt bark ingredients with kiwi, strawberries, yogurt, and chocolate

This Greek yogurt bark is a fun holiday change of pace. Okay, it's not chocolate bark, but it's good in its own right. You can eat it for breakfast if you want, and you can make it fun for the holidays by using colorful frozen fruit drizzled with dark chocolate. I used kiwi and frozen strawberries, but you can mix it up with frozen blueberries and pomegranate seeds for the holidays. The dark chocolate adds a dessert factor.

You only have a 15 to 20-minute window to eat it before you need to stick it back in the freezer since it softens as it warms up. You can add almond extract, vanilla, or even peppermint extract to change the flavor up a bit. You could use vanilla Greek yogurt too, but I like to control the type and amount of sugar.

I added only 1/4 cup of pure maple syrup to start, but I felt that if it looks like a dessert, it should taste like one too! So I added more maple syrup. You could even go a bit sweeter and add 1/2 cup of maple syrup instead of 1/3 cup that I settled on. It really depends on your sweet tooth!

Ingredients

  • 3 cup plain Greek yogurt
  • 1/3 cup pure maple syrup
  • 1/2 tsp almond or vanilla extract
  • Frozen strawberries, sliced
  • Kiwi, peeled and sliced
  • 1/2 cup melted dark chocolate chips

Instructions

  1. Mix plain Greek yogurt with pure maple syrup and extract in a bowl.
  2. Cover a small sheet pan with parchment paper. Pour yogurt mixture onto the prepared pan and spread evenly.
  3. Top yogurt mixture with sliced frozen strawberries and sliced kiwi (or whatever fruit you choose). Melt quality dark chocolate chips in the microwave or over stovetop as directed by package directions. Add melted chocolate chips to a plastic bag. Push chocolate to the bottom corner of the bag and cut a small hole in the bottom corner—drizzle chocolate over fruit and yogurt over the entire surface.
  4. Put the pan with yogurt, fruit, and drizzled chocolate in the freezer for at least 3 hours.
  5. Cut or break frozen yogurt bark into pieces after it sits for a couple of minutes outside of the freezer. Serve bark immediately. After about 15 minutes it will soften too much to be bark. Through back in the freezer to harden if needed.
