Cinnamon Buckwheat Granola

It's hard to buy granola this good and this healthy. My guru granola friend who pays 15 bucks for a little bag of his special granola admitted that this granola was much better. It's full of protein and whole grains. The buckwheat and unsweetened coconut are found in the bulk section of health-promoting stores. It's gluten-free, as long as you use gluten-free oats. It's perfect as a cereal, with yogurt or to top a smoothie bowl. Take the time to buy these ingredients in bulk and make a huge batch of this recipe to save time. I know it looks like a lot of ingredients, but you don't have to use this many. If you want to switch out any of the ingredients, go ahead. Just follow my granola formula: 4 cups whole grains (like oats and buckwheat) 4 cups seeds and chopped nuts  2 cups unsweetened coconut 1/4 cup oil 3/4 cup sweetener (raw honey and/or pure maple syrup) 5 - 6 tablespoons of cinnamon 3 cups dried fruit (chopped if needed)

2 cups rolled oats 2 cups shredded unsweetened coconut 4 cups nuts and seeds like sliced almonds, chopped pecans, sunflower seeds, chia seeds, hemp seeds, etc. 1 cup buckwheat (raw or roasted kashi) 1/4 cup refined safflower oil, canola oil, or unrefined, cold-pressed coconut oil 1/2 cup raw honey (not for babies under one year old) 1/4 cup pure maple syrup 5 to 6 tbsp cinnamon 1/4 to 1/2 tsp salt (optional) 3 cups dried fruit like chopped prunes (dried plums), blueberries, cranberries, cherries, and/or chopped apricots


1) Preheat oven to 325 degrees. In a large bowl, add oats, coconut, a variety of nuts and seeds, and buckwheat. Mix. in a small saucepan, heat and stir coconut oil, honey, maple syrup, cinnamon, and salt. Pour 1/4 of the heated mixture over the oat mixture and mix well. Continue combining in small batches until both are mixed thoroughly.
2) Spread mixture out onto a large jelly roll pan or baking sheet with a rim prepared with parchment paper or a non-stick silicone baking liner. Place in the upper portion of the oven and every 10 minutes use a large spatula and flip the granola to brown all sides. Cook for about 30 minutes or until browned through. When making a double batch, rotate the two pans every 10 minutes when you mix or flip the granola since the top one browns. Cook them for about 40 minutes total when making two.
3) While granola is baking, cut dried fruit if it needs cutting and mix dried fruit. When the granola is browned throughout, take the granola out of the oven and mix with dried fruit. Let cool and store in airtight containers. Enjoy!
