Lime Cilantro Rice

This is a tasty way to prepare rice no matter how you serve it, and it's also excellent in the Cafe Rio-Style Pork Salad. Basmati rice is a must for this recipe; whether you use the brown or white variety is up to you. Basmati makes the first step of toasting the rice in olive oil and garlic much less important. In fact, when I used basmati rice, I had a hard time telling the difference in flavor between the rice that was toasted in oil and garlic and the rice that I simply used plain. While the zest is the key ingredient that makes this rice stand above other lime rice recipes, be careful to not add too much zest when feeding young children. Start with 1/2 tsp and then add more to taste, if desired. My kids loved the rice and gobbled it up. They chose the white rice first, but when that was finished, the brown rice disappeared from our refrigerator as well!

Ingredients

  • 1 tbsp olive oil (optional)
  • 2-3 cloves garlic, crushed (optional)
  • 1 cup basmati rice, brown or white
  • 2 cups ' data-amount-secondary='118.50 ml'>1/2 cups chicken or vegetable broth (white basmati rice) or 2 cups broth (brown basmati rice)
  • 1/2 tsp salt
  • 2 tbsp fresh lime juice
  • Zest from one lime (about 1/2 tsp or to taste)
  • 1/4 to 1/2 cup cilantro, finely chopped

Instructions

  1. Heat the oil on low in a medium saucepan. Increase the heat to medium and add garlic and rice. Sauté for 2 minutes, stirring frequently. Add the stock/broth, salt, and lime juice and bring to a boil. Cover and cook on low fro 15 minute or until the water is absorbed by the rice.
  2. When the rice is done, add the lime zest and chopped cilantro and mix well. Serve immediately. Enjoy
