Lime Cucumber Apple Salad

This dish looks like a typical cucumber tomato salad, so it's surprising when you taste it: the combination of flavors is outstanding. The crisp, slightly tart sweetness of the green apple adds another dimension and blends well with the other flavors. The lime juice accentuates all of the flavors, and the slight kick from the hot pepper adds the perfect finishing touch. To top it all off, it's nutritious!

1 can organic chickpeas (or 1 1/2 cups), rinsed 2 cups chopped cucumbers, English or regular; peeled, seeded, and diced into 1/4 1 1/2 cups tomatoes, diced 1 red, orange or yellow pepper (about 1 cup), diced small 2 large scallions, chopped small (about 1/4 cup) 3 tbsp fresh lime juice 1 large Granny Smith apple, diced in a similar size to the cucumber 2 tbsp olive oil infused with garlic or olive oil 1 tsp sea salt 1/2 to 3/4 cup cilantro, chopped 1 to 2 small hot peppers, seeded and chopped small (as desired)


1) Combine chickpeas, cucumbers, tomatoes, bell pepper together in a medium bowl.
2) In a separate bowl, mix lime juice and chopped apples together.
3) Add the apple-lime mixture to the vegetable mixture along with olive oil, cumin, salt, cilantro and hot peppers.
4) Toss together and refrigerate for at least an hour to allow the flavors to blend.
