A delicious twist on pancakes, this healthy version is well-received by kids and adults. It's nice to wake up and have the batter already prepared. Make these pancakes healthier by serving them with cooked down frozen fruit made with a little pure maple syrup or raw honey, rather than serving them with traditionally processed pancake syrup. Top with plain Greek yogurt. Enjoy!

A delicious twist on pancakes, this healthy version is well-received by kids and adults. It's nice to wake up and have the batter already prepared. Ingredients

  • 2 cups old fashioned rolled oats
  • 1/2 cup white whole wheat flour or whole wheat flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 1/2 cups buttermilk or kefir (or 50% Kefir, 50% buttermilk)
  • 2 large eggs
  • 2 tbsp Canola oil
  • 3-4 tbsp real maple syrup or raw honey
  • 1 tsp vanilla extract

Instructions

  1. Combine oats, flour, baking soda, baking powder, and salt in a bowl. In a separate medium-sized bowl, whisk buttermilk, eggs, oil, maple syrup or honey, and vanilla extract together. Add dry ingredients to this wet mixture and stir until mostly blended.
  2. Refrigerate overnight.
  3. Heat a large griddle (or skillet) to 300 degrees F or over medium heat. Spray with non-stick cooking spray. Ladle batter into small pancakes and cook until the bottom is golden brown and it’s easy to slip the spatula under the pancake. Flip with a spatula and cook until the bottom is golden brown.
  4. Serve with fresh or frozen fruit (i.e. berries or peaches) cooked down in a fruit sauce. Use real maple syrup or raw honey (not for babies) to sweeten fruit sauce to taste. Top with slightly sweetened plain Greek yogurt (optional).
