Quick Chicken Salad Lunch

Ingredients

8 oz chicken, cooked and cubed or 1 (12.5 oz ) can chicken breast, drained 3 tbsp green onions, chopped small 1/3 cup plain Greek yogurt, nonfat 2 tsp olive oil infused with garlic or olive oil 1/4 tsp sea salt or as desired 1 to 2 cups finely shredded cabbage (coleslaw mix) 1 large apple, diced small with skin on 2 tsp white balsamic vinegar Ak-Mak Sesame Crackers or crispy whole grain cracker

Directions

1) In medium bowl, mix chicken, onion, Greek yogurt, oil, salt, 1 cup cabbage and apples together. Serve on Ak-Mak Sesame Crackers and celery. Eat immediately. This salad holds up well in the refrigerator for three to four days, especially if using firm apples. Add more cabbage with each repeated use.
