Quick Spinach & Tomato Pasta

Spinach and Tomato Pasta When I have some leftover pasta, I make this quick dish for dinner, and everyone loves it. I try to keep these ingredients on hand, so I always have something good, fast and healthy to make. 1 Tsp olive oil (optional) 2 Tsp crushed garlic or 5 cloves of fresh garlic, minced 2 Tbsp pesto 2-4 Tbsp red onion, chopped 1 cup tomatoes, diced (2 medium) or grape tomatoes 1 cup pasta (any type) cooked 2 cups baby fresh baby spinach sea salt and pepper to taste 2-3 Tbsp Romano or Parmesan cheese, freshly grated 1/4 cup pine nuts toasted (optional) Sauté garlic in oil and pesto, over medium heat for one minute. Add onions and cook for another minute. Add tomatoes and cooked pasta and cook until heated through. Add spinach, stir through and turn off the heat. Add cheese, pine nuts (optional) and salt and pepper to taste. Serves two.
