Quinoa Garbanzo Tomato Salad

Inspired by an Allspice.com recipe called Quinoa with Chickpeas and Tomatoes, this very healthy, high-protein salad uses fresh lime juice to give it a fresh, delicious taste. The cucumbers and red onion add even more dimension. A terrific way to add the "super grain", quinoa, into your diet and my teenagers gobbled it up without batting an eye.

3 cups cooked quinoa 1 can garbanzo beans, drained and rinsed 1 1/2 cups tomatoes, diced 1 1/2 cups cucumber, diced  (3/4 of English cucumber) 1/2 cup red onion, finely chopped 1 tsp garlic, minced or crushed 4 tbsp fresh lime juice (about 2 small limes) 2 tbsp olive oil 3/4 tsp ground cumin 1/2 tsp salt (or more as desired) 1/4 tsp pepper 1/2 cup fresh flat parsley, chopped


1) Rinse and cook 3/4 cup quinoa per package directions. Meanwhile, stir together garbanzo beans, tomatoes, cucumbers, red onion, garlic, lime juice, olive oil, cumin, salt & pepper and parsley.
2) Add cooked quinoa and stir.
