Quinoa Garbanzo Tomato Salad Inspired by an Allspice.com recipe called Quinoa with Chickpeas and Tomatoes, this very healthy, high-protein salad uses fresh lime juice to give it a fresh, delicious taste. The cucumbers and red onion add even more dimension. A terrific way to add the "super grain", quinoa, into your diet and my teenagers gobbled it up without batting an eye. Meanwhile, stir together garbanzo beans, tomatoes, cucumbers, red onion, garlic, lime juice, olive oil, cumin, salt & pepper and parsley. 2) Add cooked quinoa and stir.
