Spinach Mozzarella Nuggets

These spinach balls are fun for kids and adults too. They are slightly crispy and have a nice flavor. I have also made them with a mixture of kale and spinach, and they were delicious as well!

8 cups fresh organic baby spinach, cooked, drained and chopped 1/2 cup seasoned bread crumbs, whole grain if possible 1/4 cup wheat germ and /or flax seed meal 1 1/2 cups mozzarella cheese, grated 3 eggs 1 tsp Tuscan herb spice mixture or your favorite Italian spice seasoning 1/2 tsp sea salt or kosher salt


1) Preheat oven to 375 degrees F. Steam or microwave spinach, drain and chop.
2) Mix wheat germ and/or flax with bread crumbs. In a large bowl, mix 4 tablespoons of the bread crumb mixture with spinach, cheese, eggs, seasoning, and salt. Form nugget-sized balls and roll them in the remaining bread crumb mixture.
3) Place balls on cookie sheet sprayed with non-stick oil. Lightly spray the balls with oil mister or non-stick spray. Bake in preheated oven for 20-25 minutes, turning over after 15 minutes.
