Holidays will be even better with this mouthwatering dip! Your guests will never believe it's health-promoting too. Better yet, it's so flexible; add any fresh herbs you have on hand or add more water and make the best creamy dressing ever. It's easy too. All you need is a blender, raw cashews (like from Trader Joe's or the bulk section of many stores), white balsamic vinegar, a lemon, olive oil, and some seasonings. Fresh dill and basil are my favorites, but even a dried seasoning blend taste terrific. It's dairy-free and gluten-free too. Just make sure your guests don't have a tree nut allergy and get ready for it to be a hit.

Ingredients

  • 1 cup raw cashews
  • 1/2 cup water (or more for desired consistency)
  • 3 Tbsp lemon juice
  • 1 tsp garlic
  • 1 - 2 Tbsp fresh dill, thyme, basil etc. or 1 - 2 tsp dried seasonings
  • 1/2 tsp sea salt and pepper to taste
  • 2 Tbsp extra virgin olive oil
  • 2 Tbsp white balsamic vinegar

Instructions

  1. Soak cashews in water for 15 minutes.
  2. Meanwhile, put other ingredients in a high-powered blender. Feel free to change up your herbs and seasonings. Any fresh herb is tasty in this recipe, but even a standard seasoning mix blend works. I love fresh dill and basil in this dressing.
  3. Drain cashews and add to blender. If you don't have a high-powered blender, soak cashews for an extra 30 minutes or more. Blend all ingredients together until creamy and chill.
  4. Store any leftovers in the refrigerator for up to four weeks. Makes about 1 1/4 cups.
