Watermelon Feta Salad with Radishes
With a slight lime flavor, this refreshing watermelon salad quenches your thirst and satisfies your hunger on a hot summer day. The cucumber adds a crunchy texture, while the feta, mint, red onion and radish complement the sweet watermelon in different ways. Add more mint if you are a mint junkie like me; otherwise stick to 1/4 cup. Both radishes and watermelon are packed full of nutrients, making this a healthy and tasty summer recipe.

Ingredients
5 cups 1-inch chunks seedless watermelon 2 cups English cucumber, diced 1/4 cup red onions, thinly sliced (chives also work) 3/4 cup radishes (about 3 large) very thinly sliced and quartered 1 cup high quality feta cheese, crumbled 3 tbsp fresh lime juice (more to taste) 1/4 cup fresh mint leaves, chopped (more to taste) Coarsely ground black pepper to taste
Directions
1) In a large bowl, combine the watermelon, cucumber, red onion or chives, radishes, feta, and a few grindings of black pepper.
